Cream of Asparagus Soup
Ingredients:
- 1 medium onion, chopped
- 3 cups fresh asparagus, cut in 1-inch pieces
- 1/8 tsp. red pepper flakes
- 2 to 3 Tbsp. sour cream
- 1/2 tsp. ground nutmet
- 1 clove garlic, minced
- 2 1/2 cups chicken broth
- 3 oz. cream cheese, cubed
- 1 tsp. dill weed
Instructions:
Coat large saucepan with nonstick cooking spray. Saute onion and garlic in saucepan until tender. Add asparagus, broth and red pepper flakes. Bring to a boil. Reduce heat, cover and simmer until asparagus is tender, 10 to 15 minutes. Place half of mixture in blender; add cream cheese, sour cream, dill weed and nutmeg. Cover and process until smooth; return to saucepan. Cook over medium heat until heated through.
This is a wonderful soup as well as being another way to enjoy asparagus. Some people won't realize it is asparagus they are eating. Soup may be made with light or fat-free products.
