Boston Maple Baked Vegetarian Beans

Serves 4-6

Ingredients:

4 cups dried, white navy beans or great northern white beans
water to cover beans overnight
3-4 cups water
1 small onion, very finely minced
1 cup molasses
1/2 cup pure maple syrup
2 tsp salt
pepper to taste
3/4 cup ketchup
2 tsp dry mustard
1/2-1 tsp liquid smoke
1/3 cup brown sugar, packed firm

Instructions:

Cover beans with water and let soak overnight. Next day, drain beans and place in a 4-5 quart Dutch oven with a lid.

Preheat oven to 275 degrees F. Mix in all ingredients over beans, tossing to coat well. Cover and bake 4-8 hours until beans are tender, stirring once or twice to ensure beans are getting well sauced and to check seasonings or add more water if beans seem to require it. (reheats well)
