Almond Turkey Salad
- 1 can (8 oz.) pineapple tidbits in its own juice
- 1 can (15 oz.) mandarin oranges*
- 2 cup diced, cooked turkey
- 1/2 cup light mayonnaise
- 1/2 cup non-fat plain yogurt
- 1/2 cup slivered almonds
Open cans of pineapple bits and Mandarin oranges. Drain well. Reserve pineapple juice for another use. Place the cooked, diced turkey in a medium bowl with the fruit; set aside. Mix mayonnaise and yogurt in a 2 cup measuring cup. Fold into fruit and turkey mixture. Gently mix in the slivered almonds. Use to make a sandwich, stuff a pita, top lettuce greens, or fill half a cantaloupe.
Makes 4 servings.
*Note: Try substituting 1 cup of grape halves for variety.
