Chocolate Amaretto Cheesecake
- 12 chocolate wafers or 6 graham cracker squares
- 1 cup light cream cheese
- 1 cup granulated sugar
- 1 1/2 cups low-fat cottage cheese
- 6 Tbsp unsweetened baking cocoa
- 1/4 cup all-purpose flour
- 1/4 cup Amaretto
- 1 tsp vanilla extract
- 1 egg
- 2 Tbsp semi-sweet chocolate mini-morsels
- 1-2 cups clean, whole raspberries or sliced strawberries
8 hours or a day before serving: Finely crush chocolate wafers or graham cracker squares and sprinkle into the bottom of an 8-inch spring form pan. Set aside. Position knife blade in food processor bowl. Add cream cheese, sugar, cottage cheese, cocoa, flour, Amaretto and vanilla extract, processing until smooth. Add egg and process just until blended. Pour mixture over crumbs in pan. Sprinkle semi-sweet chocolate chip morsels on top of mixture.
Preheat oven to 300°F.
Bake for 45 to 50 minutes or until cheesecake is set. Let cool in pan on wire rack. Once cheesecake is cool, cover and chill at least 8 hours. Remove sides of pan. Serve with raspberries or strawberries for top of cheesecake.
Fold in whipped topping (add a few drops of yellow food coloring if you wish.) Pour into serving bowl and chill, or pour into 5 one-cup dessert dishes. Refrigerate for at least 2 hours.
