Yummy Pumpkin Date Bread
Ingredients:

- 1/2 cup chopped pecans
- 1/2 cup chopped dates
- 2/3 cup dark raisins
- 1/2 cup flaked coconut
- 1/3 cup all-purpose flour
- Part#2
- 2 cups all-purpose flour
- 2 1/2 teaspoons Clabber Girl Baking Powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup shortening
- 1 teaspoon light corn syrup
- 1 cup milk
- 2 eggs
- 1 cup canned pumpkin
Instructions:
In a medium bowl, mix together ingredients for part 1. Set aside. In a large bowl combine 2 cups flour, Clabber Girl Baking Powder, cinnamon, nutmeg, baking soda, salt and sugar. Add shortinging, corn syrup and milk. Beat 2 minutes, then add eggs. Mix well. Add date mixture and mix until combined.
Pour into two greased 8x4-inch bread pans. Sprinkle each with 1 teaspoon sugar (if desired) and garnish tops with pecan halves.
Bake in a preheated 350°F. oven for approximately 55 minutes, or until toothpick inserted in center comes out clean.
