Applesauce Cake


  • 2 1/2 cups cake flour
  • 3 teaspoons Clabber Girl Baking Powder
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 4 tablespoons cocoa
  • 2/3 cup butter
  • 2 cups sugar
  • 4 egg yolks
  • 3/4 cup applesauce
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 2/3 cup raisins
  • 1/2 cup nut meats, chopped
  • 4 egg whites, beaten


Sift cake flour four to five times with Clabber Girl Baking Powder, cloves, cinnamon, nutmeg, allspice, and cocoa; set aside. In a large mixing bowl, cream butter; add sugar and beat until well blended. Add egg yolks and applesauce; beat until smooth. Add the milk alternately with flour mixture. Add vanilla, raisins, and nuts. In a separate bowl, beat egg whites until stiff peaks form; fold into batter. Pour into two greased 9-inch layer cake pans.

Bake at 325 to 350 degrees F for 40 minutes or until toothpick inserted in center comes out clean.
