Fresh Fruit Salad w/ Lime, Mint and Honeyed Yogurt Dressing


For the fruit:
Prepare the fruit just before serving to avoid brown or mushy fruit. You will need about 6 cups and up to 8 cups of cut fresh fruit of your choice:
blueberries, pineapple, strawberries, grapes, melons, oranges, bananas,
mango, papaya, etc.
For the dressing:
1 1/2 cups plain yogurt
2-3 tablespoons fresh lime juice
1-2 tablespoons honey
8-10 mint leaves, washed, stacked and cut into thin “ribbons”


Toss the prepared fruit into a good size, colorful serving bowl. Reserve about one cup of the mixture and set aside.

Whisk together all the dressing ingredients. Fold into the fruit mixture just before serving. Toss the reserved cup of fruit over the top for a more vivid presentation and serve.

Makes enough for about 8-10 servings.
