Herb Roasted Turkey


1/2 teaspoon rosemary
1/2 teaspoon thyme
1/2 teaspoon sage
1 minced garlic clove
1 tablespoon olive oil
one 18 to 24 lb. turkey
1 tablespoon olive oil


Make paste of the spices and one tablespoon olive oil. Take turkey and lift the skin off the breast and drumsticks, sliding your fingers underneath. Rub the paste as evenly as possible against the meat. Press skin back down. Apply 1 tablespoon olive oil to the outer skin and rub. Consult Turkey Roasting Guide for baking directions.
