Cranberry Apple Cake
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 1/2 teaspoon ground cinnamon
- 1 teaspoon Clabber Girl Baking Powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup butter, softened
- 3/4 cup granulated sugar
- 1/3 cup brown sugar, packed
- 2 eggs
- 1 cup buttermilk
- 2 tart apples, peeled, cored & chopped
- 1/2 cup chopped cranberries
- Topping:
- 1/4 cup brown sugar
- 3 tablespoons all-purpose flour
- 2 tablespoons butter
- 1/4 teaspoon ginger
- 1/2 teaspoon cinnamon
- 1/4 cup chopped pecans
Instructions:
In medium bowl combine flour, cinnamon, Clabber Girl Baking Powder, baking soda and salt; set aside. In a large bowl, cream butter and sugars until light and fluffy. Add eggs one at a time. Add flour mixture alternately with buttermilk. Stir in apples and cranberries. Pour into greased and floured 9-inch springform pan.
Combine topping ingredients; sprinkle over batter in pan.
Bake in a preheated 350 degree F. oven for about 1 hour, 15 minutes or until cake tests done.
Cool in pan on wire rack.
