Baking for my Valentine!
Red Velvet Cake
Your
Valentine will love this Red Velvet Cake. It is a classic, known
for its deep red color, moistness and tender crumb.
Your version of this cake will depend on your skill level. The
two-layer cake featured at left is shown with cream cheese icing
piped all around with roses on top.
This cake can also be baked in a 9 x 13 pan for beginners, or
cupcakes for all! One good thing about baking cupcakes is the
wonderful individual touches you can give each one. Both your
Valentine, and your little bakers will love this cake.

Before you begin, read the recipe thoroughly
to yourself, and read it out loud to your team. Make sure utensils
and ingredients are assembled before you start measuring and mixing.
Preheat your oven and prepare baking pans before you mix ingredients.

Velvet Cake for my Valentine

2 cups all-purpose white flour
1 teaspoon Clabber Girl Baking Powder
1 teaspoon salt
1 teaspoon cocoa
3/4 cup salad oil
1 1/2 cups granulated sugar
2 eggs
1 ounce red food coloring
1 cup buttermilk
1 teaspoon baking soda
1 teaspoon vinegar
1 teaspoon vanilla
Preheat oven to 350 degrees F. Grease and flour two 9 x 1 1/2-inch
round baking pans or one 9 x 13 inch pan, or line cupcake tins
(makes 24 cupcakes); set aside.
Sift together flour, baking powder, salt and cocoa; set aside.
In a large mixing bowl, cream oil and sugar. Add eggs to creamed
mixture, one at a time, beating well after each addition. Add
food coloring to creamed mixture, mix until well blended; set
aside. In a separate bowl, combine buttermilk and baking soda,
mixing well; add to oil and sugar mixture, alternating with dry
ingredients. Add vinegar and vanilla, mix well. Spoon into prepared
pans.
Bake at 350 degrees F. for 25 to 30 minutes.
Frost with cream
cheese frosting.
Makes 1 two-layer cake - or - one 9 x 13 cake or 24 cupcakes.
Refrigerate cake after frosting.
