Cherry Coffeecake

general get-together. Plan a menu that is fast and serve buffet-style.
Quick Cherry Coffeecake is one of those recipes that only takes
a few minutes to whip up, and will disappear as soon as it's set
on the table.

Recipe:
Quick Cherry Coffeecake (printable)
1/2 cup softened butter
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1/2 cup milk
2 cups all-purpose flour
2 teaspoons Clabber Girl Baking Powder
1/4 teaspoon salt
1 (19 oz.) can cherry pie filling
Instructions
Preheat oven to 350 degrees F., and spray a 9 x 13 inch cake pan
with cooking spray.
In a large bowl cream the butter and sugar. Add eggs, vanilla
and milk to make a smooth batter. In a separate bowl combine flour,
Clabber Girl Baking Powder and salt. Stir into batter and beat
for one minute. Spread half of the batter into the pan; spoon
cherry pie filling over. Dollop the rest of the batter onto the
cherry pie filling.
Bake for about 50 to 60 minutes or until cake top is gently browned.
Cool well before serving.
Serves 12
