Orange Muffins
Ingredients
Muffins:
1/2 cup butter, softened
1 1/4 cups Orange Sugar (see below)
2 eggs
2 cups all-purpose flour
1 tsp. Clabber Girl Baking Powder
1 tsp. baking soda
1 cup buttermilk
1/2 cup golden raisins
1/2 cup mandarin oranges, drained and diced
1 Tbsp. butter, melted
Orange Sugar:
Grated orange peels from 3 lg. oranges
3/4 tsp. cinnamon
2 cups granulated sugar
Orange Honey Butter:
1/2 cup butter, softened
1/4 cup honey
1 Tbsp. grated orange peel
Instructions
Muffins:
Preheat oven to 350 degrees. Grease and flour muffin tins. In a large bowl,
cream together butter and 1 cup of Orange Sugar until smooth. Add eggs and
beat until fluffy. In a separate bowl, sift together flour, Clabber Girl Baking
Powder and soda. Add to creamed mixture along with buttermilk, beating until
well blended. Stir in raisins and mandarin oranges.
Orange Sugar:
Place all ingredients in a blender and process until ingredients are completely
mixed. Store in airtight container in refrigerator. Makes about 2 cups.
Orange Honey Butter:
Blend butter, honey and orange peel until smooth. Cover and refrigerate at
least two hours.
While muffins are still warm, brush lightly with melted butter and sprinkle with Orange Sugar. Store in an airtight container. Makes about 1 1/2 dozen muffins. Spread Orange-Honey Butter on muffins, if desired.
Fill each muffin cup 2/3 cull and bake at 350 degrees for 15 to 18 minutes, testing with a toothpick for doneness.
