Sour Cream Orange Cookies
Ingredients
1 cup yellow raisins, plumped and dried
1/2 cup brown sugar, packed
1/4 cup white sugar
1/2 cup unsalted butter
1 egg
1 teaspoon pure vanilla extract
1/2 teaspoon orange oil
zest of one small orange, finely minced
1/3 cup sour cream
1/4 teaspoon salt
1/4 teaspoon baking soda
1 1/2 teaspoons Clabber Girl Baking Powder
1/8 teaspoon cinnamon
2 cups all-purpose flour
Instructions
Preheat oven to 350 F. Stack two baking sheets together and line top one with
parchment paper. Cover the raisins with hot water and let stand 3 minutes.
Drain and dry well and set aside.
In a mixing bowl, cream the sugars with the butter
until smooth. Add in the egg, vanilla, orange oil, orange zest and sour cream
and blend until smooth.
Fold in dry ingredients. Form into large cookies – about 3-4 tablespoons
of dough – and press very lightly onto the prepared cookies sheet. Bake
15-18 minutes until lightly browned on top and beginning to brown around the
edges. Cool well.
(You can also dust these with confectioners’ sugar)
