Blueberry Muffins

Ingredients
3 cups Clabber Girl Baking Mix
1 1/2 cups milk
2 eggs
1 teaspoon vanilla
1 cup granulated sugar
2 cups blueberries
Instructions
Preheat oven to 425 degrees F.; Combine baking mix,
milk, eggs, vanilla and sugar. Stir well. Fold in blueberries
until just incorporated. Scoop or spoon batter into
greased muffin pan (approximately 1/2 full). Note: you
may substitute an equal amount of raspberries, raisins,
dates or other fruits for the blueberries.
Bake for 12 to 14 minutes or until golden brown.
Yield: 12 to 16 muffins
