Coconut Caramel Bars

Ingredients
Crust:
1 1/4 cups Clabber Girl Baking Mix
1 1/2 cups brown sugar
2 teaspoons vanilla extract
1/2 cup (1 stick) butter
1 1/2 cups shredded sweetened coconut
Toppings:
1 1/2 cups semisweet chocolate chips
1 cup (10 oz.) caramel, from a block or unwapped candies
or Caramel ice cream topping
1/2 cup toasted shredded sweetened coconut
Instructions
Preheat oven to 350 degrees F.; Lightly gease a 9 x
13 inch or 11 x 11 inch pan; set aside.
In a large mixing bowl, mix together butter, brown
sugar, vanilla, baking mix and 1 1/2 cups of the coconut.
Spread the mixture in the prepared pan. Bake for 20
minutes.
Remove pan from oven and sprinkle chocolate chips evenly
over top of bars. Let chocolate soften for 5 minutes,
then spread evenly across top.
In a saucepan, or in microwave melt caramel on low
heat, stirring frequently, until it can be poured. Drizzle
caramel over top of bars. Sprinkle on remaining coconut.
Loosen edges of the crust with a knife and set on cooling
rack to cool completely. Cut bars into even pieces and
serve.
