Farm Pudding (printable)
Ingredients
Pudding:
4 cups apples, sliced
1/2 cup raisins
1/2 cup granulated sugar
1/2 cup chopped walnuts
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
dash salt
margarine or butter
1 tablespoon lemon juice
Batter:
1 egg
1/2 cup milk
3 tablespoons margarine of butter, melted
1 1/2 cups all-purpose flour
1 cup granulated sugar
dash salt
1 tablespoon Clabber Girl Baking Powder
1/4 to 1/2 cup chopped nuts
Whipped cream for garnish, if desired
Instructions
Preheat oven to 375 degrees F. Generously grease a 9x13-inch
baking pan with margarine or butter. In the pan, arrange apples
and raisins; set aside. In a bowl, mix sugar, walnuts, nutmeg,
cinnamon and salt; sprinkle over apple-raisin mixture. Dot
with margarine or butter; sprinkle lemon juice over mixture;
set aside. In a bowl, beat together egg, milk and melted butter.
Add flour, sugar, salt and Clabber Girl Baking Powder; mix
well. Pour over apple-raisin mixture. Sprinkle with chopped
nuts. Bake at 375 degrees F. for 30 minutes.
