Banana Nut Muffins
Who doesn’t love a banana muffin in the morning? We make it easy with this recipe calling for Clabber Girl Baking Powder.
Clabber Girl Baking Powder
whole wheat flour
1. Cream together shortening and sugar; beat in eggs.
2. Blend in banana puree and vanilla.
3. Sift together flour, Clabber Girl Baking Powder and salt; add to creamed mixture.
4. Mix just until blended. Stir in nuts.
Portion batter with #6 scoop into 48 large greased muffin tins. Bake at 350 degrees F. for 30 to 35 minutes or until tested done.
Yield: 48 Muffins
Portion batter with #40 scoop or .8oz scoop into 144 greased mini muffin tins. Bake at 350 degrees F. for 20 minutes or until tested done.
Yield: 144 Mini Muffins
