Cheese Soup

Cheese soup is a winter favorite. By adding in some chopped vegetables, and thickening it with Clabber Girl Corn Starch, you can add a new favorite to your menu.

Ingredients

  • 4 oz. all-purpose flour
  • 8 oz. butter
  • 1 lb. carrots finely diced
  • 1 lb. celery finely diced
  • 1 1/2 gal. chicken stock
  • 4 oz. Clabber Girl Cornstarch
  • 8 oz. onions chopped
  • 1 tsp. paprika
  • 1/2 c. parsley fresh, finely chopped
  • 2 tbsp. salt
  • 1 lb. sharp cheddar cheese shredded
  • 2 tsp. white pepper
  • 1 gal. whole milk

Instructions

  • Saute onions in butter until lightly browned.
  • Add flour and corn starch. Blend well and cook for 5-6 minutes.
  • Add seasonings and blend.
  • Add milk and stock slowly, while stirring.
  • Cook until thickened.
  • Cook carrots and celery until tender but slightly crisp. Add to soup.
  • Add cheese and stir until melted.
  • Garnish with chopped parsley.
