Beehive Cookies

These cookies are made with honey and lemon zest for a sweet and tangy flavor overall.



  • 1 lb. cake flour plus 10 oz.
  • 2 tbsp. cinnamon
  • 1 tsp. salt
  • 12 oz. butter chilled
  • 1 tsp. baking soda
  • 7 oz. brown sugar
  • 4 oz. lemon zest
  • 8 oz. whipped topping Whipped Honey or Creme
  • 3 oz. eggs


"Combine first 4 ingredients and set aside.

Take the next 4 ingredients and cream until smooth.

Add eggs and mix well. Add dry ingredients in thirds, mixing well with each addition.

Shape dough into log that is 12 ins. long and chill until firm, or up to 24 hours. Cut log into1/4 in. slices. Place on parchment- lined baking sheet. Sprinkle with coarse sugar, if desired. Bake at 350 F for 10 minutes or until edges are lightly browned. Cool cookies for 5 minutes on baking sheet, then transfer them to a rack and cool completely."
