Almond Tart/Pie

This creamy pie is topped with apricot jam and decorated with tempered fondant and almond pieces.



  • 2 lb. Cake crumbs, plus 3 oz.
  • 1 lb. sugar plus 3 oz.
  • 1 lb. almonds Paste, plus 12 1/4 oz.
  • 1 lb. eggs plus 4 oz.
  • 1 lb. heavy cream plus 2 oz.
  • 1/3 oz. cinnamon
  • 1 lb. milk plus 2 oz.
  • 7 oz. orange peel
  • 14 oz. cake flour
  • 1/4 oz. Davis Baking Powder


"Mix first 4 ingredients using a paddle attachment. Add eggs one at a time until well incorporated. Stop the mixer. 

Add Cream, milk and orange peel .

Sift flour and Davis Baking Powder twice and then add. Mix on low until well incorporated.

Deposit into six 8-in pie shells. Bake at 375F until golden brown. Glaze with apricot jam, and decorate with tempered fondant and almond pieces."
