Fat-free Ginger Cookies

This is a reduced fat cookie that still has a lot of flavor due to the plum puree and spices.



  • 1 lb. plums Puree
  • 8 oz. egg whites
  • 2 lb. sugar plus 4 oz.
  • 1/2 oz. ginger ground
  • 1/2 oz. baking soda
  • 1 lb. Pastry Flour plus 14 oz
  • 1/2 tsp. salt
  • 12 oz. ginger crystalized


"In a large mixing bowl, mix plum puree and egg whites together.

Add sugar and continue mixing.

Sift in dry ingredients. Adding until all incorporated. 

Fold in Crystallized ginger.

Scale into 8-oz. units and refrigerate. Roll dough into tubes and cut six pieces from each tube. Place cookies on prepared sheet pan and flatten. Bake at 365 F for 15 to 18 minutes."
