Ranger Cookies

These cookies taste even better with the addition of pecans, but aren't required.



  • 3 lb. blueberries
  • 2.5 oz. sugar
  • 3 tsp. cinnamon
  • 3/4 oz. salt
  • 2 lb. brown sugar plus 1 oz.
  • 3 lb. margarine
  • 3/4 oz. eggs
  • 3 lb. baking soda plus 3 oz.
  • 3 lb. cake flour plus 3 oz.
  • 2 lb. coconut Angel Flake, plus 1 oz.
  • 1 lb. coconut Macaroon Coconut, plus 2 oz.
  • 1 1/2 lb. pecans pieces
  • 1/2 oz. vanilla
  • 12 oz. cereal (Rice Crispies)
  • 3/4 oz. Clabber Girl Baking Powder


"Cream together margarine, sugar, brown sugar and salt for 2 minutes on high speed.

Add eggs, mix, then scrape the bowl.

Add rest of ingredients (minus cereal) and mix for 2 minutes on medium speed.

Add cereal and mix for 30 seconds on low speed.

Roll dough into strips 3/4 to 2-inch diameter depending on your desired cookie size. Cut strips into 1-in. pieces, placing them on a papered sheet pan and flatten them slightly. Bake at 355  F for 8-10 minutes or until golden brown in color. Do not over bake.

*The pecans are optional, but taste great with this cookie."
