"1. Prepare one 12.5oz. bag Royal® Strawberry Mousse Mix per package instructions.
2. Immediately scoop out strawberry mousse with 1/2-ounce (#40) scoop disher onto a parchment-lined sheet tray, and freeze at least 2 hours or overnight. (Hint: it is best to freeze 20 to 25 on smaller trays so they can be prepared in smaller batches without thawing.)
3. Chop two pounds dark chocolate, mix with 3 tablespoons vegetable oil. Microwave in one-minute intervals, stirring after each minute until chocolate is smooth.
4. Remove mousse portions from freezer, dip into chocolate, and place onto a new parchment-lined sheet tray. (Hint: it is best to use a fork for dipping to prevent excess chocolate from pooling around the bon-bons.
5. Bon-bons can be stored in the cooler for up to 24-hours until service or wrapped in the freezer for up to 30 days.
