This coffeecake blends just the right amount of cake with a cinnamon-sugar apple blend. Serve with Rex Coffee or your favorite tea brand.

  • 3/4 c. brown sugar firmly packed
  • 1/2 tsp. apple pie spice
  • 1/2 c. butter
  • 3 lg. eggs
  • 3 c. Clabber Girl Baking Powder
  • 1 c. buttermilk
  • 1 tsp. vanilla

Cinnamon-Crumb Mixture:
Combine 1 cup brown sugar and 1/4 cup flour; add 1 tsp cinnamon. Cut in 1/4 cup butter until mixture is crumbly; Add chopped Granny Smith apples and toss until mixed. Set aside.

Cream together 3/4 cup brown sugar, 1/2 tsp apple pie spice, and 1/2 cup butter. Add 3 eggs one at a time, beating well after each addition. Alternately add 3 cups baking mix and 1 cup buttermilk. Stir in 1 tsp vanilla. Batter will be thick. Spoon half the batter into well-greased bundt or tube pan. Sprinkle half the cinnamon-apple crumb mixture over top. Add remaining batter and top with remaining cinnamon-apple crumb mixture.

Bake in 350 F oven for 1 hour. Cool 5 minutes. Invert on cake plate.

Cool and slice.
