Decadent Cream Cheese Pound Cake

This isn't a traditional pound cake with a pound of butter in it. Rather than all butter, it becomes a decadent pound cake with part butter and part cream cheese. Sprinkle the top of this cake with a powdered sugar icing and blueberries for a refreshing summertime dessert.


  • 3/4 c. butter
  • 1 1/2 c. sugar
  • 3 c. Clabber Girl Baking Mix
  • 1/2 c. all-purpose flour
  • 1/8 tsp. salt
  • 1 tsp. vanilla extract
  • 6 eggs
  • 8 oz. cream cheese
  • Powered Sugar Glaze
    • 1 c. powdered sugar sifted
    • 1 tbsp. milk or orange juice
    • 1/4 tsp. vanilla


Preheat oven to 350 degrees F.; Grease and flour angel food or tube cake pan 10x4 inches, or 2 loaf pans, 9x5x3 inches.

In a large bowl, beat together all ingredients except powdered sugar. mix on low speed of electric mixer for 30 seconds, scraping bowl frequently. Beat on medium speed 4 minutes, scraping bowl occasionally. Pour into prepared pan(s).

Bake 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; turn pan upside down onto wire rack; remove pan and cool cake completely.

For the glaze, combine all of the ingredients and drizzle over the pound cake, if desired.
