Cornmeal Latkes Classic Holiday Favorite

Cornmeal Latkes are a classic holiday favorite and are easy to make. Look for more Cornbread Holiday Favorites Recipes from Clabber Girl.


  • 1 tbsp. sugar
  • 2 c. cornmeal
  • 1 tsp. salt
  • 2 tsp. Davis Baking Powder
  • 2 eggs beaten
  • 2 c. buttermilk
  • 3 tbsp. vegetable oil


Heat griddle or large skillet over medium-high heat. Combine cornmeal, sugar, Davis Baking Powder and salt in a large bowl; make a well in center of mixture. Combine milk, oil and eggs; stir well. Add to dry ingredients, stirring just until moistened. 

Spray griddle with cooking spray. Spoon 2 tablespoons of batter onto pre-heated griddle. Cook until tops of cakes are covered with bubbles and edges appear slightly dry. Flip cakes and continue cooking until bottom sides are browned.

Serve with butter, if desired. Makes about 1 dozen cornmeal latkes. Recipe by Karen Mitchell-Wilcher.
