Sweet Potato Biscuits II

  • 1 1/4 c. all-purpose flour
  • 2 tbsp. sugar
  • 1 tbsp. Clabber Girl Baking Powder
  • 1/2 tsp. salt
  • 3/4 c. sweet potato cooked and mashed
  • 1/2 tsp. cinnamon
  • 1/4 c. butter softened
  • 2-4 tbsp. milk


Heat oven to 400 degrees F. Sift together flour, sugar, baking powder, salt and cinnamon. In a separate bowl, mix sweet potatoes and butter. Add the flour mixture to potato mixture, mixing to make soft dough. Add milk 1 tablespoon at a time to dough mixture and cut in using a pastry blender. Turn dough onto a floured surface and toss lightly until outside of dough is smooth. Roll dough out to ½-inch thick and cut with a biscuit cutter. Place biscuits on a greased cookie sheet. Brush tops of biscuits with melted butter. Bake about 15 minutes or until bottoms are browned.
