Colleen's Buttermilk Pancakes

Straight from the pages of our cookbook 'Brickyard to Backyard', this recipe comes from Colleen Dallenbach of Indianapolis, Indiana. These pancakes are just the right amount of sweet and fluffy.


  • 2 c. all-purpose flour
  • 1 1/2 tsp. Clabber Girl Baking Soda
  • 1 1/2 tsp. Clabber Girl Baking Powder
  • 1/4 c. sugar
  • 2 1/2 c. buttermilk
  • 3/4 c. butter (melted)
  • 2 lg. eggs
  • 1/2 tsp. salt


Preheat griddle to 375 degrees F.

In a bowl, mix flour, baking soda, baking powder, sugar and salt. In a small bowl, whisk eggs, buttermilk and butter until blended. Stir egg mixture into flour mixture; mix with a whisk until batter is smooth. 

Pour 1/3 c. batter onto lightly-greased hot griddle. Flip pancakes after bubbles appear in batter and edges appear dry. Pancakes are done when brown on both sides. Serve with butter and warm syrup.
