Chocolate Chip and Caramel Cookie Squares

  • 1 c. butter or margarine (softened)
  • 3/4 c. sugar
  • 3/4 c. brown sugar (firmly packed)
  • 1 egg
  • 2 1/2 c. all-purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. Clabber Girl Baking Powder
  • 1 tsp. Clabber Girl Baking Soda
  • 12 oz. chocolate chips
  • 1 c. quick cooking rolled oats
  • 3/4 c. chopped walnuts (optional)
  • Caramel for Cookie Squares
    • 2/3 c. caramel sundae topping
    • 5 Tbsp. all-purpose flour
    • 1 tsp. vanilla extract


Preheat oven to 350 degrees F. Grease a 9-inch square baking pan and set aside.

In large bowl, cream butter or margarine, white sugar, brown sugar and egg. Stir in flour, Clabber Girl Baking Soda, Clabber Girl Baking Soda and salt. Add chocolate chips and oats. Mix well. Reserve 1/2 cup cookie dough. Place remaining dough mixture in bottom of a greased 9-inch square pan.

Bake at 350 degrees F. for 10 minutes or until cookie dough puffs and appears dry.

While the cookie dough is baking, in small bowl, combine 5 tablespoons flour, caramel topping and teaspoon of vanilla; blend well. Remove crust from oven. Sprinkle with walnuts, drizzle evenly with caramel mixture. Crumble reserved cookie dough mixture over caramel. Return to oven; bake an additional 20 minutes; cool completely before cutting into bars.
