Fruit Salad with Zesty Dressing

Summer fruit is so plentiful, but you'll enjoy it a lot more with this easy to make fruit dressing. It's just the right amount of sweet and zesty for any kind of fruit you have on hand.


  • 4 1/2 Tbsp. Clabber Girl Cornstarch
  • 1 c. sugar
  • 1 c. pineapple juice
  • 1/2 c. lemon juice
  • 1/2 c. whipping cream
  • 3/4 c. orange juice
  • 4 eggs
  • 4-5 lb. fruit (berries, melons, peaches, pears, kiwis, grapes)


Combine cornstarch and sugar in a small bowl and blend well. In a medium saucepan, combine all juices and heat to boiling. Using a wire whisk, slowly add cornstarch mixture to hot juices. Beat eggs in a small bowl and add a little of the hot liquid. Add egg mixture to saucepan. Cook and stir until thickened. Put the saucepan in an ice water bath to chill quickly. Whip the cream and fold into dressing then refrigerate. Serves 12. Serve with fruits.
