Homemade Peanut Butter Cups

Ingredients

  • 11-12 oz. semi sweet chocolate chips
  • 1 c. creamy peanut butter
  • 1/4 tsp. salt
  • 1/2 c. powdered sugar

Instructions

Place half of chocolate chips in a microwave safe container. Microwave on high for 30 seconds. Remove and stir the chips, then continue microwaving on high at 30 second intervals until melted. Should take between 1 to 3 minutes total depending on wattage.

Using a silicone brush, work the chocolate into the crevices of candy mold or paper muffin cup liners. Get about 1/8-inch layer of chocolate down if using a candy mold. For paper muffin liners, fill about 1/4-1/2 inch thick. Place into freezer while working on filling.

To prepare the filling: Whip peanut butter for 2-3 minutes until it is light brown. Add salt and powdered sugar, mix for another 1-2 minutes. Take a coffee mug or wide mouth jar and line with a plastic sandwich bag. Scoop the filling into the bag, then remove from the mug or jar. Try to get out all the air, seal the bag and cut off one of the bottom corners-just enough to pipe the filling into your molds or muffin pan.

Remove candy mold or muffin pan from freezer. Pipe peanut butter filling into mold. 

Place second half of chocolate chips in a microwave safe container. Microwave on high for 30 seconds. Remove and stir the chips, then continue microwaving on high at 30 second intervals until melted. Should take between 1 to 3 minutes total depending on wattage.

Take a coffee mug or wide mouth jar and line with another plastic sandwich bag. Pour the melted chocolate into the bag, then remove from the mug or jar. Try to get out all the air, seal the bag and cut off one of the bottom corners-just enough to pipe the chocolate into your molds or muffin pan.

Smooth the top of the chocolate with an offset knife. Set candy mold or muffin pan back into freezer and leave until candy is frozen solid. Remove from molds and keep in airtight container in refrigerator until ready to serve.
