Apple Cinnamon Coffee Cake

This coffeecake blends just the right amount of cake with a cinnamon-sugar apple blend. Serve with Rex Coffee for the perfect Sunday morning treat.


  • 3/4 c. brown sugar firmly packed
  • 1/2 tsp. apple pie spice
  • 1/2 c. butter
  • 3 lg. eggs
  • 1 c. buttermilk
  • 1 tsp. vanilla
  • Cinnamon Crumb Mixture
    • 1 c. brown sugar firmly packed
    • 1/4 c. all-purpose flour
    • 1 tsp. cinnamon
    • 1/4 c. butter
    • 1 c. Granny Smith apples cored, chopped, peeled (about 1 apple)
  • 3 c. Clabber Girl Baking Mix


Cinnamon-Crumb Mixture:
Combine brown sugar, flour and cinnamon. Cut in butter until mixture is crumbly; Add chopped Granny Smith apples and toss until mixed. Set aside.

Cake: Preheat oven to 350 degrees F. Grease a bundt or tube pan.

Cream together brown sugar, apple pie spice, and butter. Add eggs one at a time, beating well after each addition. Alternately add 3 cups of Clabber Girl Baking Mix and buttermilk. Stir in vanilla. Batter will be thick. Spoon half the batter into bundt or tube pan. Sprinkle half the cinnamon-apple crumb mixture over top. Add remaining batter and top with remaining cinnamon-apple crumb mixture.

Bake in 350 degree F oven for 1 hour. Cool 5 minutes. Invert on cake plate.

Cool and slice.

Yield 12-16 slices.
