Chocolate Oatmeal Cookies

These gluten-free chocolate oatmeal cookies from Chocolate Covered Katie are perfect for chilly autumn days like these. Warm up with the flavor of cocoa, your favorite nut butter and oats.


  • 2/3 c. quick cooking rolled oats
  • 2 Tbsp. cocoa
  • 1/4 tsp. salt
  • 1/4 c. mini chocolate chips
  • 1/4 tsp. Clabber Girl Baking Soda
  • 1/4 c. oil or 1/3 c. nut butter
  • 6 Tbsp. oat flour
  • 6 Tbsp. unrefined sugar
  • 2 Tbsp. water
  • 1/2 tsp. vanilla extract


Preheat oven to 325° F. Grease a cookie tray, and set aside. Stir together quick cooking rolled oats, oat flour, cocoa, baking soda, salt, unrefined sugar and mini chocolate chips in a bowl. Combine oil or nut butter, water and vanilla in a separate bowl. Mix dry and liquid ingredients together until a dough forms. If dough is too soft to form balls, refrigerate until firmer. Scoop out balls with a cookie scoop, then flatten a little with a spoon. Bake 10 minutes.
