Pumpkin Pie Spiced Kettle Corn

1. Using a large pot, heat the vegetable oil over medium heat. Once the oil is hot, stir in the sugar, pumpkin pie spice and popcorn kernels. Cover and shake the pot constantly to keep the sugar from burning. (5 second intervals work well, set on heat for 5 seconds, shake for 5 seconds, set on heat for 5 seconds; repeat.)
2. Once the popping has slow to once every 2 or 3 seconds, remove the pot from the heat and continue to shake for a couple minutes to make sure the popcorn is done popping. Transfer into a bowl, and allow to cool. Stir occasionally to prevent any clumping.
