Banana Nut Bread

This banana nut bread does not skimp out on the banana flavor! Great recipe to share with friends and family looking for the perfect banana bread.


  • 1 c. bananas ripe, mashed
  • 1/2 c. sugar
  • 1/2 c. plain nonfat yogurt
  • 1/4 c. butter or margarine, melted
  • 2 tsp. vanilla extract
  • 1 lg. egg
  • 1 egg white
  • 2 c. all-purpose flour
  • 1 tsp. Clabber Girl Baking Powder
  • 1 tsp. Clabber Girl Baking Soda
  • 1/4 tsp. salt
  • 1/4 c. chopped walnuts


Preheat oven to 350° F. Lightly coat a 8x4-inch loaf pan with floured baking spray.

In a large mixing bowl combine the bananas, sugar, yogurt, butter or margarine, vanilla, egg and egg white; beat at medium speed with an electric mixer until blended.

In a separate bowl combine flour, baking powder, baking soda and salt; stir in walnuts. Add flour mixture to banana mixture, stirring just until dry ingredients are moistened. Spoon batter into a 8x4-inch loaf pan.

Bake for 1 hour and 5 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes on wire rack; remove from pan and cool completely on wire rack.

Yield: 16 servings
