Chili Seasoning

This Chili Powder, which, aside from using it in chili, can also be used as dry rub on pork or chicken. I took Best in Presentation and second in Overall in the 2006 Annual IRL Chili Cook-off competition with this recipe.


  • 1/4 c. paprika
  • 2 dried ancho chiles stemmed and seeded
  • 1 arbol chili stemmed and seeded
  • 2 dried pasilla chiles stemmed and seeded
  • 1 bay leaf
  • 1/4 c. pumpkin seeds
  • 1/2 Tbsp. cocoa powder
  • 1 dried chipotle chili stemmed and seeded
  • 4 tsp. ground cumin
  • 2 tsp. Oregano
  • 1/2 tsp. Black Pepper
  • 1 tsp. garlic powder
  • 2 tsp. salt
  • 1 tsp. Cuban Espresso
  • 1/2 tsp. ground cloves
  • 1/8 tsp. ground cinnamon


Tear all the chilies into rough pieces. In a large pan, dry roast all of the ingredients for about 10 minutes over medium heat. Place the mixture in a food processor and blend to a fine powder. Store in an air tight container.
