Apricot Honey Biscuits

  • 4 c. all-purpose flour
  • 1 Tbsp. Clabber Girl Baking Powder
  • 1/2 tsp. Clabber Girl Baking Soda
  • 1 Tbsp. granulated sugar
  • 1 c. dried apricots
  • 16 Tbsp. unsalted butter (cold and cut into bits)
  • 1 1/2 tsp. salt
  • 1 1/2 c. buttermilk
  • 2 1/2 Tbsp. unsalted butter (melted)
  • 3 Tbsp. honey
  • 5 Tbsp. honey


Stir flour, baking powder, salt, baking soda and sugar together. Cut in butter until mixture resembles coarse crumbs. Add apricots and toss to coat. Add buttermilk and honey, then stir until a dough forms.

Roll dough out on floured surface until 3/4-inch thick. Cut into 12 squares.

Bake the biscuit at 400° F on a greased sheet pan for about 12 minutes or until tips are golden brown.

While the biscuits are baking, whisk together the melted butter and honey. Brush finished biscuits with the butter and honey mixture. Serve warm.
