Apple Streusel Muffins

Cinnamon and allspice give these muffins a great spiced apple cake flavor. They are perfect for an on the go breakfast that is homemade.


  • 1 1/2 c. all-purpose flour
  • 1/2 c. granulated sugar
  • 2 tsp. Clabber Girl Baking Powder
  • 1 tsp. cinnamon
  • 1/4 tsp. allspice
  • 1/4 tsp. Clabber Girl Baking Soda
  • 1/4 tsp. salt
  • 1 c. apple tart, diced
  • 2 lg. eggs
  • 1 c. sour cream
  • 1/2 c. butter melted
  • Streusel Topping
    • 1/2 c. chopped walnuts
    • 1/4 c. all-purpose flour
    • 3 Tbsp. sugar
    • 2 Tbsp. butter room temperature
    • 1/4 tsp. cinnamon


Preheat oven to 375 degrees F. Prepare 16 muffin cups with oil, spraying with non-stick spray, or placing muffin liners in each location.

Muffin Instructions: In a large bowl, combine flour, sugar, Clabber Girl Baking Powder, cinnamon, allspice, Clabber Girl Baking Soda and salt. Add diced apples, mix to coat, and set aside. In a separate medium sized bowl, whisk eggs, sour cream, and butter together. Once liquid ingredients are combined, pour liquid mixture over the dry and combine together just until all ingredients become moistened. Spoon batter into muffin cups, filling each to 3/4 capacity.

Streusel Topping Instructions: In a medium bowl, mix walnuts, flour, sugar, butter and cinnamon. Once mixed, use a spoon and top each muffin with streusel.

Bake in preheated oven for approximately 20 minutes or until a toothpick inserted in center of muffins comes out clean. To help ensure even baking, muffins may be turned midway through baking process.
