Individual Cherry Pies

This is a great way to serve up cherry pie and giving each person the right amount of crust and filling.


  • 5 c. cherries, pitted
  • 1 tbsp. Rumford Cornstarch
  • 1/2 c. granulated sugar
  • 2 tsp. lemon juice
  • 1/2 tsp. almond extract
  • 1 1/2 c. oats
  • 1/2 c. all-purpose flour
  • 1/2 tsp. Rumford Baking Powder
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 c. butter chilled, cut into small pieces


Heat oven to 350 F.

Combine cherries, Rumford Corn Starch, sugar, lemon juice and almond extract; mixing well. Set aside. Spray ramekins or souffle cups with non-stick cooking spray. In a mixing bowl, combine oats, flour, sugar, Rumford Baking Powder, salt and cinnamon. Cut in butter until oats mixture is crumbly. Spoon reserved cherry mixture into prepared ramekins. Top with oat mixture. Bake 40-45 minutes or until tops are golden brown and cherry mixture is bubbly.
