Pear and Cranberry Bars

If oats do not fit into a specific gluten free diet, substitute rolled quinoa or amaranth instead.Both are available at natural foods stores, along with the other specialty flours and nut meal listed here.


  • 1 1/3 c. rice flour
  • 1/2 c. almonds meal
  • 1/2 c. Clabber Girl Cornstarch
  • 1/2 c. Potato Starch
  • 1 tsp. xanthan gum
  • 1 tsp. Clabber Girl Baking Powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/2 tsp. salt
  • 1 c. rolled oats
  • 1 1/2 c. brown sugar packed
  • 12 tbsp. butter unsalted
  • 2 Pear ripe
  • 1 c. cranberries


Preheat the oven to 350 . Butter a 9x13 baking pan.

Mix together the rice flour, almond meal, Cllabber Girl Cornstarch, potato starch, xanthan or guar gum, Clabber Girl Baking Powder, baking soda, cinnamon, ginger and salt.Break up any lumps.Stir in the oats, the brown sugar and the melted butter until the mixture forms coarse crumbs. Press 3 1/2 cups of the mixture evenly into the prepared pan. Scatter the pears and cranberries evenly over the surface and sprinkle with the remaining mixture.

Bake for about 40 minutes or until the crust is golden brown. Cool and cut into bars. Serve warm, or store refrigerated and reheat before serving.
