Rex Rich Banana Loaf

The two flavors go together wonderfully. With the bitterness of the coffee to the sweetness of the banana, this bread will give your tastebuds a treat!


  • 1 c. banana puree very ripe, about 3 bananas
  • 1 1/4 c. dark brown sugar, firmly packed firmly packed
  • 1/4 c. oil
  • 2 lg. eggs
  • 2 tsp. pure vanilla extract
  • 2 tsp. cinnamon
  • 1/4 tsp. cloves
  • 1 tsp. Clabber Girl Baking Soda
  • 1 tsp. Clabber Girl Baking Powder
  • 1/4 tsp. salt
  • 1 2/3 c. all-purpose flour
  • 1/2 c. Rex Coffee, brewed
  • 1 c. shredded semisweet chocolate, optional
  • 1 c. chopped walnuts or pecans (optional)


Preheat oven to 300 F. Spray a 9 by 5 inch loaf pan with non-stick cooking spray.

In a food processor (you can also mix by hand in a mixing bowl), puree the bananas and set aside. In a separate bowl blend the oil, eggs, and vanilla for a minute. Combine dry ingredients in large bowl and whisk to fully incorporate. Add in the egg mixture and bananas and blend, pouring in the coffee as mixture is blending together. Mix until smooth, about 1 minute. Add chocolate and nuts.

Spoon into the prepared loaf pan and set the pan on the baking sheet. Bake for 1 hour 20 minutes, or until the top springs back when pressed and a toothpick inserted in the center comes out clean.

Makes one loaf.
