Apricot Walnut Bread

This fruit and nut bread is sure to please! It is very simple to make and you can exchange the dried apricots for any dried fruit you prefer.


  • 3/4 c. apricots dried
  • 1 lg. eggs beaten
  • 1 c. granulated sugar
  • 2 tbsp. butter melted
  • 2 c. all-purpose flour
  • 1 tbsp. Clabber Girl Baking Powder
  • 1/2 tsp. salt
  • 1/4 tsp. Rumford Baking Soda
  • 1/2 c. orange juice
  • 1/4 c. water
  • 1 c. chopped walnuts


Preheat oven to 350 degrees F. Lightly grease a 9x5-inch loaf pan.

Combine apricots and water in small saucepan; bring to a boil. Remove from heat; cover and let stand about 30 minutes. Drain well; chop apricots; set aside. Combine egg, sugar and butter, mixing well; set aside. Combine flour, Clabber Girl Baking Powder, salt and Rumford Baking Soda. Add egg mixture to flour mixture. Stir in orange juice and water; mixing well. Stir in reserved apricots and walnuts.

Spoon mixture into prepared 9x5-inch loaf pan. Bake in preheated oven at 350 degrees F. for 1 hour or until wooden pick inserted into center comes out clean. Cool in pan 10 minutes; remove from pan, cool completely on wire rack.

Yield: 1 loaf
