Blueberry Pancakes

Blueberry pancakes are a wonderful breakfast staple. With Clabber Girl Baking Powder as an ingredient, they are fluffy and have the perfect texture.


  • 1 c. all-purpose flour
  • 1 tbsp. granulated sugar
  • 2 tsp. Clabber Girl Baking Powder
  • 1/4 tsp. salt
  • 1 lg. eggs beaten
  • 1 c. milk
  • 2 tbsp. vegetable oil
  • 1/2 c. blueberries


In a mixing bowl, stir together flour, sugar, Clabber Girl Baking Powder, and salt. In another mixing bowl combine egg, milk, and cooking oil; add to flour mixture all at once. Add blueberries and stir mixture just until blended; batter will be slightly lumpy.

For each pancake, pour about 1/4 cup batter onto a hot, lightly greased griddle or heavy skillet (for dollar-size pancakes use about 1 tablespoon batter). Cook until pancakes are golden brown, turning to cook second sides when pancakes have bubbly surfaces and slightly dry edges.
