You can use other flavors of jams or preserves to mix up these oatmeal bars a bit. Apricot, cherry, blueberry and even orange would be tasty with the oatmeal.

  • 1 c. oats
  • 1/4 tsp. ground cinnamon
  • 1/2 c. butter softened
  • 3/4 c. brown sugar
  • 12 oz. seedless blackberry jam 12 oz., or preserves
  • 2 c. Clabber Girl Baking Mix

Heat oven to 400 degrees F. Grease 9 X 9 baking dish; set aside. In a large bowl; combine Clabber Girl Baking Mix, oats, and brown sugar. Cut in butter until mixture resembles coarse crumble. Work the dough with your hands until it just holds together.

Press half the baking dough into pan. Spread jam over dough mixture (leaving a gap around the edges). Cover fruit mixture completely with remaining dough and press into place.

Spray top layer of dough with cooking spray. Bake 30 minutes or until golden brown.

Cut into 24 bars.

Other flavors of jam or preserves can be used.
