Traditional Blueberry Muffins

The lemon zest in these blueberry muffins gives an unexpected flavor that will leave people wondering what your secret ingredient is.


  • 2 c. all-purpose flour
  • 1/2 c. sugar
  • 2 tsp. Davis Baking Powder
  • 1/2 tsp. salt
  • 1/2 tsp. grated lemon rind
  • 1 lg. eggs slightly beaten
  • 1/2 c. milk
  • 1/4 c. vegetable oil
  • 3/4 c. blueberries fresh


Combine first 5 ingredients in large mixing bowl; make well in center of mixture. Combine egg, milk, and oil; add mixture to dry ingredients, stirring just until moistened. Spoon into greased muffin pans filling about two-thirds full. Bake at 400`F for 20 to 25 minutes or until light golden brown. Remove muffins to wire rack; cool completely.
