Cheeseburger Casserole

Cheeseburger casserole is perfect for a tasty weeknight dinner, takes just 2 dishes and can be ready in less than one hour!


  • 1 lb. lean ground beef
  • 1 med. onions
  • 1/2 tsp. pepper
  • 1 can condensed cheddar cheese soup 11 oz.
  • 1 can mixed vegetables 15 oz., drained, or 1 cup frozen mixed vegetables
  • 1 1/2 c. all-purpose flour
  • 2 tsp. Clabber Girl Baking Powder
  • 1/4 c. canola oil
  • 1/2 tsp. salt
  • 1/2 c. milk
  • 2 c. shredded cheddar cheese


Heat oven to 400 F. Grease 13 x 9-inch baking dish. Cook ground beef and onion in skillet over medium heat until beef is brown. Season with black pepper.

Drain grease from pan. Stir in soup and vegetables; heat until hot. In a medium bowl, stir flour, baking powder and salt. Add oil, milk and 1-1/2 cups of cheese; spread evenly in bottom of baking dish. Spread beef mixture over batter. Sprinkle with remaining 1/2 cup cheese. Bake 30 minutes.
