Chili Powder Meat Rub

Chili powder meat rub can be used on steaks, chicken breast, salmon, pork tenderloin and many other cuts of meat.


  • 1/2 c. paprika
  • 4 dried ancho chiles stems pulled, seeds saved
  • 4 dried pasilla chiles stems pulled, seeds saved
  • 2 chili arbol stems pulled, seeds saved
  • 2 chipotle chiles
  • 3 bay leaf
  • 1/2 c. pumpkin seeds
  • 2 tbsp. cocoa powder
  • 2 tbsp. Clabber Girl Cornstarch
  • 8 tsp. ground cumin
  • 4 tsp. dried oregano
  • 4 tsp. salt
  • 2 tsp. granulated garlic
  • 2 tsp. espresso
  • 1 tsp. pepper
  • 1 tsp. ground cloves
  • 1/2 tsp. cinnamon


Tear all the chilies into rough pieces. In a large dry saute pan dry roast all of the ingredients for about 10 minutes over medium heat. place the mixture in a food processor and blend to a fine powder. Store in an airtight container and use in all your favorite recipes as a chili powder or meat rub.
