Chocolate Mint Brownies

These brownies are perfect for family get-togethers or even book club meetings. You can decorate them with a mixture of nuts and chocolate for a fancy finish.


  • 1 c. butter melted, or vegetable oil
  • 1 c. sugar
  • 1 c. brown sugar packed
  • 3 lg. eggs
  • 2 tsp. pure vanilla extract
  • 3/4 c. cocoa powder
  • 1 c. all-purpose flour
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 1/4 tsp. Clabber Girl Baking Powder
  • 1 c. chocolate mint candies chopped
  • 1 c. walnuts chopped, or a mix of nuts and chocolate chips, all optional
  • 2-3 c. confectioner's sugar
  • 1/2 c. butter or margarine, softened
  • 3-6 tbsp. water warm, as needed


Preheat oven to 350 F. Line an 8 x 10-inch brownie pan with parchment paper and spray sides with non-stick cooking spray.

In a large bowl, blend butter or oil, sugar, eggs, and vanilla. Fold in cocoa and blend well, and then remaining ingredients to make a thick batter. Fold in walnuts and chocolate mint candies. Spoon into pan. Place on a baking sheet and bake 25-28 minutes until just set.
Cool well.

For the frosting, blend confectioner's sugar, butter or margarine and warm water on slow speed of mixer until things are combined. Increase speed, and add water, as required, to make a soft frosting. Spread it on brownies. Decorate with additional mint candies or a mixture of nuts and chocolate chips.
