These biscotti are perfect for dipping into Rex Coffee. For an added treat, dip one end of the biscotti into melted white chocolate and let harden before serving.

  • 6 tbsp. butter
  • 1 c. granulated sugar
  • 2 lg. eggs
  • 2 c. all-purpose flour
  • 1/2 c. cocoa powder
  • 1 tsp. Clabber Girl Baking Soda
  • 1/2 tsp. Clabber Girl Baking Powder
  • 1/4 tsp. salt
  • 1 c. walnuts chopped
  • 1 c. semi sweet chocolate chips
  • 1 tsp. confectioner's sugar

Preheat oven to 350 F; grease and flour cookie sheet.

In a large bowl, cream butter and sugar together; stir in eggs. In a separate bowl, mix flour, cocoa, baking soda, Clabber Girl Baking Powder and salt. Add this to the creamed mixture and mix thoroughly. Mix in chopped walnuts and chocolate chips.

With floured hands shape dough into two flattened logs approximately 12 inches long; sprinkle with powdered sugar.
Bake 35 minutes; cool on baking sheet until warm, about 10 minutes; transfer to cutting board and cut into 3/4 inch slices.
Arrange cut pieces with cut sides down on baking sheet and bake until crisp, about 8 to 10 minutes. Let them sit 1-2 minutes before transferring to a wire rack to cool.
