Clabber Girl Banana Bread

This banana nut bread is full of banana flavor! You can prepare this without the nuts, but they are nice for added texture.


  • 1 3/4 c. all-purpose flour
  • 1/2 c. sugar
  • 2 tsp. Clabber Girl Baking Powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 c. mashed banana 2-3 bananas
  • 1/2 c. shortening margarine, or butter
  • 2 tbsp. milk
  • 2 lg. eggs
  • 1/4 c. chopped nuts


Preheat oven to 350 F. Grease an 8 x 4-inch loaf pan. Set aside. In a large bowl, combine 1 cup of the flour, the sugar, Clabber Girl Baking Powder, baking soda, and salt. Add mashed banana, shortening, and milk. Beat with an electric mixer on low speed until blended. Beat on high speed for 2 minutes. Add eggs and remaining flour; beat until blended. Stir in nuts.

Pour batter into the prepared pan. Bake for 55 to 60 minutes or until a toothpick inserted near the center comes out clean. Cool in the pan on a wire rack for 10 minutes. Remove from the pan; cool completely on a wire rack. Wrap and store overnight before slicing. Makes 1 loaf (16 servings).
